I get a lot of questions from people saying: how do you have time to make such pretty breakfasts every morning?? My secret: meal prep! Do I have time to sit in front of my waffle maker every morning and make just a few to eat that day? Heck no 🤷🏻‍♀️ I’m a school teacher and it’s hands the most exhausting things that I do! I have to be at school by 6:30 and I don’t leave until 3 or 4. So I spend a couple of hours every Sunday making easy breakfasts and lunches for the week 🤗 My best friends are overnight oats, but sometimes I get a little fancier with @simplemills waffles. Like last week, I was so hungry a few hours after lunch and I wanted an easy snack. I used one of my waffles and topped it with @foragerproject cashew yogurt, blackberries, @sunandswellfoods crumbs, and @kweenandco granola butter 😍 I was so satisfied and happy all the way to dinner! Sometimes simple makes for the prettiest breakfasts 😍 Y’all know how much I love my toppings, but sometimes just fruit is all you need. I used @bobsredmill gluten free oats and @foragerproject cashew milk to make cinnamon pear overnight oats topped with 1/2 oven roasted pear. If you haven’t tried roasting your pears, please do! They just melt in your mouth and make for the best oatmeal topping ✨ I also added 1 kiwi and fresh blackberries with a handful of @navitasorganics goji berries. This bowl actually took less than two minutes to put together and it tasted amazing 😏 The exact recipe for my overnight cinnamon pear oats are a while back! Let me know if you can’t find it. Two posts in one day just for #toasttuesday ✌🏻 These were definitely inspired by @whatrobineats and her 4 toast combos. I was craving sweet potato toasts and I found the most perfect mini potatoes at @traderjoes. After cutting them in half and baking them with a little avo oil, I topped each one to satisfy my sweet and savory dilemma. 90% of the time, I love coming up with new recipes and combining my own ingredients to create something creative and exciting 🤗 But sometimes I just don’t have time for that and I need something quick and easy. My go to (in case you haven’t noticed) has been @simplemills! Their ingredients are so clean that I don’t feel sick after I eat five in a row 😏 So thank you @simplemills for feeding my cookie addiction and keeping me feeling like myself while I do it lol. These cookies took less than 10 minutes in the oven and all I needed to add was a little vanilla, applesauce, and almond milk to get them to be the right consistency. Good morning! It’s Monday and I’m really trying to stay positive! Monday’s have a tendency to be really tough for me, especially on days when it’s cold and raining and I’d rather be in bed with a book 🙏🏻 But, there’s nothing like a yogurt bowl to make the day a little easier. I used @foragerproject yogurt mixed with fresh blackberries to create a yummy flavor. I topped the yogurt with slices of cara cara oranges (my fave) and @beefreeglutenfree plain grainless granola 😍 I also sprinkled on a few @navitasorganics goji berries, coconut chips, and added @simplemills waffles to really keep me satisfied until lunch. Is chocolate for breakfast wrong? Because if it is, I don’t want to be right 😍 Woke up craving chocolate, so I decided to satisfy that craving with double chocolate and carrot baked oats! I topped them with @purely_elizabeth plain granola, @foragerproject yogurt, and a drizzle of @wild_friends chocolate almond butter 🍫 I ate this amazing bowl after a great hot yoga class. I woke up not really in the mood to do anything active today, but honestly, it was exactly what I needed. I feel happy, full, and ready to take on a productive Sunday 🏃🏽‍♀️ • Double chocolate and carrot baked oats: ~ 1/2 cup @bobsredmill gluten free oats ~ 1/3 cup @foragerproject cashew milk ~ 3 tbs applesauce ~ 1/2 chopped apple ~ 1 tbs melted @enjoylifefoods chocolate chips Mix in a bowl and then bake at 350 until the top is golden brown.
